It’s that time of year!!! Zucchini time!!! We have been inundated with lots of these lovelies the past few weeks, so I’ve been experimenting and trying some new recipes using them and thought I’d share our favorites here for you. Enjoy!!
I have to admit….I’m not really into the zucchini breads & cookies…it’s just not my thing…honestly, I guess it seems like a waste to hide them in baked goods, lol! So, the recipes I will be sharing are for side dishes and main courses with zucchini.
1. MEXICAN BEEF & ZUCCHINI
I call recipes like this one my Hamburger Helpers. You know…those recipes you can whip up quickly that are great for weeknight meals. And, bonus….it’s packed full of veggies…WIN-WIN!! This one was a hit all the way around….our toddlers loved it and so did my husband. He likes flavor, and this one fit the bill for him. 2. PARMESAN ROASTED ZUCCHINI
This is a perfect side dish! Looking for an alternative for a french fry, these work great and are very easy. I even cheated and used a Mexican shredded cheese blend because we had a couple packages on hand and didn’t want to buy more and it was still great! Keep an eye on the cook time. The recipe calls for 20-30 minutes and my oven used another 5-10 minutes to get them done enough to crisp up a bit. Find the recipe here: Parmesan Roasted Zucchini (crazyforcrust.com)
3. One Pot Zucchini Pasta
This one had my husband raving…which to be honest kind of surprised me, I didn’t think it had enough flavor or would be filling enough to really win him over. That wasn’t the case at all, he really loved it! Mine was definitely not Pinterest worthy, though, lol. I do not have a spiralizer to make the ‘noodle’s, so was experimenting with a couple methods to make them by hand. Since the recipe was a hit, I think I will get a Spiralizer so that I can make these vegetable noodles faster and easier! We had leftover shrimp from the night before that was a perfect addition to this recipe. Chicken would also work very well to top off this dish. Get the recipe here: One Pot Zucchini Pasta.
