Just when you thought the BLT could not be outdone……
One of my favorite summer sandwiches is a good ol’ fashioned BLT with garden tomatoes!! Of course anything with garden tomatoes in the middle of summer is amazing….you just can’t beat them!! But, I decided to change up the usual with a little twist….and it was a BIG hit with the whole family. I’m sure it will be a winner with yours, as well! It’s perfect for a quick summer dinner or a delicious lunch!
So let’s get to it:
- 2 slices of whole grain bread
- shredded Cheddar Jack cheese
- cooked bacon
- Top one slice of bread with a liberal amount of shredded cheese and leave the other plain. Place both slices of bread on a tray and toast in toaster oven. Remove carefully when done.
2. On the slice of bread with the cheese break up 2-3 slices of cooked bacon. (I love my bacon crispy! How ’bout you?) On the plain toasted slice of bread, spread a generous serving of guacamole.

3. Add several slices of tomato and close sandwich.
